Shrimp Avacado Salad


2 tablespoons olive oil
2 tablespoons lemon juice
1 teaspoon lemon zest
1/3 cup chopped fresh cilantro or flat leaf parsley
1/2 or 3/4 pound shrimp. (size of choice)
2 avacados
lettuce leaves of choice


1. In a small bowl combine olive oil, lemon juice and lemon zest, cilantro or parley and salt.
2. Pour over shrimp and marinate overnight or at least 3 hrs.
3. Peel and cut up the avacado into large chunks.
4. Wash and dry the lettuce leave. Place the shrimp and avacados on lettuce leaves. Drizzle
a little of the marinate on the salad.
