Paleo Style Meat Loaf
Instructions
  1. MEATLOAF:
    1) Pre-heat oven to 400 degrees
    2) In a medium pan over medium heat pour 1 -2 Tablespoon olive oil, add onions and roasted pepper and cook until onions are soft.
    3) Put all meatloaf ingredients including onions and peppers. Mix well.
    4) Shape into a loaf and place into an ovenproof pan . Bake for 40 - 45 minutes
    5) Let meatloaf cool slightly, pour on sauce and serve.
    6) Garnish with roughly chopped basil
  2. TOMATO SAUCE:
    Mix all the ingredients in a small sauce pan and simmer for 5 -10 min.
  3. BACON BRAISED BRUSSELSPROUTS:
    1) Cook bacon until browned and crispy. (stir often)
    2) Add brusselsprouts to a pan with 2 tablespoons of broth. Stir often.
    3) Add 2 tablespoons of broth each time the brusselsprouts start to stick.
    4) When brusselsprouts are cooked ( 15 - 20 min) and start to stick again sprinkle the bacon over them and stir.
  4. PALEO CAULIFLOWER MASH:
    1) Steam cauliflower florets in steamer basket until for tender (8 - 10 min.)
    2) Drain the cauliflower and place in bowl, add in all the seasonings and puree with potato masher or food processor.
    3) Adjust seasonings and serve.
